Champagne Jello Squares Recipe - Blue Chair Bay®

Champagne Jello Squares

  • 1.5 oz. Blue Chair Bay® White Rum
  • 1 1/4 cups sugar
  • 1 cup club soda
  • 1 box gelatin, plain
  • 2 1/2 cups brut sparkling wine or champagne, divided

  1. Combine champagne, club soda, and sugar in a saucepan. Sprinkle gelatin on top.
  2. Let gelatin soften for about two minutes to bloom, then heat mixture over low heat. Stir until gelatin has completely dissolved, about 2 to 3minutes, and remove from heat.
  3. Stir in the rum and remaining champagne.
  4. Grease a loaf pan with nonstick cooking spray. Pour mixture into mold and chill for 2 hours, or until firm.
  5. Invert jello to parchment paper-lined cutting board and slice into squares and serve cold.
