Key Lime Sandwich Cookies Recipe - Blue Chair Bay®

Key Lime Sandwich Cookies

  • Graham Cracker Cookies:
  • 3/4 cup all purpose flour
  • 3/4 cup graham cracker crumbs
  • 1 tsp. ground cinnamon
  • 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar (plus more for rolling cookies)
  • 1 tsp. vanilla
  • 1 egg yolk
    • Key Lime Rum Cream Cheese Filling:
    • 1/2 cup Blue Chair Bay® Key Lime Rum Cream
    • 8 oz cream cheese, softened
    • 1 1/2 cup powdered sugar
    • juice and zest of 2 key limes (about 1 tsp. key lime juice)

  1. Preheat oven to 375 degrees F.
  2. Whisk together flour, graham cracker, cinnamon, baking powder and baking soda. Set aside.
  3. Using hand mixer, cream together butter, sugar, vanilla and egg.
  4. Incorporate dry ingredients into butter/sugar mixture by folding with a spatula. At first it may seem like not enough liquid, but keep folding by pressing ingredients together and you will get a thick dough.
  5. Cover baking sheet with parchment paper.
  6. Roll cookie dough into ½ inch balls, then roll in granulated sugar. Place on cookie sheet and bake for 6-8 minutes until lightly browned on the bottom.
  7. Allow cookies to cool completely.
  8. While cookies are cooling, using a hand mixer, combine cream cheese, Key Lime Rum Cream, powdered sugar, and key lime juice and zest.
  9. Scoop filling into a gallon size plastic bag. Cut a small bit off of one corner of the bag and pipe filling onto one graham cracker cookie.
  10. Use a similar size cookie to make a sandwich and repeat.
