Key Lime Sandwich Cookies
- Graham Cracker Cookies:
- 3/4 cup all purpose flour
- 3/4 cup graham cracker crumbs
- 1 tsp. ground cinnamon
- 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar (plus more for rolling cookies)
- 1 tsp. vanilla
- 1 egg yolk
- Key Lime Rum Cream Cheese Filling:
- 1/2 cup Blue Chair Bay® Key Lime Rum Cream
- 8 oz cream cheese, softened
- 1 1/2 cup powdered sugar
- juice and zest of 2 key limes (about 1 tsp. key lime juice)
- Preheat oven to 375 degrees F.
- Whisk together flour, graham cracker, cinnamon, baking powder and baking soda. Set aside.
- Using hand mixer, cream together butter, sugar, vanilla and egg.
- Incorporate dry ingredients into butter/sugar mixture by folding with a spatula. At first it may seem like not enough liquid, but keep folding by pressing ingredients together and you will get a thick dough.
- Cover baking sheet with parchment paper.
- Roll cookie dough into ½ inch balls, then roll in granulated sugar. Place on cookie sheet and bake for 6-8 minutes until lightly browned on the bottom.
- Allow cookies to cool completely.
- While cookies are cooling, using a hand mixer, combine cream cheese, Key Lime Rum Cream, powdered sugar, and key lime juice and zest.
- Scoop filling into a gallon size plastic bag. Cut a small bit off of one corner of the bag and pipe filling onto one graham cracker cookie.
- Use a similar size cookie to make a sandwich and repeat.
