- 1 cup Blue Chair Bay® Mocha Rum Cream
- 2 1/4 cups cold coffee
- 1 cup cream of coconut
- 1/2 cup pineapple juice
- whipped cream, for garnish
- maraschino cherry, for garnish
Freeze coffee in ice cube trays. When coffee is frozen place in blender along with cream of coconut, Mocha Rum Cream, and pineapple juice. Blend until smooth. Pour into a glass and garnish with whipped cream and cherry.
