Spiked Sugar Cookies Recipe - Blue Chair Bay®

Spiked Sugar Cookies

  • 1 tbsp. Blue Chair Bay® Coconut Spiced Rum Cream
  • 3 cups all-purpose flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg, beaten
  • powdered sugar, for rolling out dough

  1. Preheat oven to 375 degrees F.
  2. Stir flour, baking powder, and salt.
  3. Place butter and sugar in a separate large bowl and mix until light in color.
  4. Add egg and rum cream and stir to combine. Gradually add flour mixture while stirring to create the dough.
  5. Roll out dough to 1/4-inch thick using powder sugar.
  6. Cut into a pumpkin shape, place at least 1-inch apart on a greased baking sheet, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time.
  7. Move cookies to a wire rack for cooling.
  8. Once cooled frost like Jack-O'-Lanterns for a spooky treat!
