Strawberry Shortcake Mimosa
- 10 oz. Blue Chair Bay® Vanilla Rum
- 1 bottle champagne or prosecco
- 2/3 cup strawberry ice cream
- 1/2 cup crushed Nilla Wafers
- 10 strawberries
- whipped cream, for garnish
Cut a slit in a fresh strawberry and use it to rim the champagne flute. Dip the rim into Nilla Wafer crumbs. Add 1 tbsp strawberry ice cream and 2.5 oz Vanilla Rum into the flute and top with champagne. Garnish with whipped cream, Nilla Wafer crumbs, and the sliced strawberry.
